Nothing says summer like an abundance of zucchini. Well, at least to gardeners and their friends. By the end of July most gardeners are grumbling about the ever prolific, shockingly quick to grow zucchini. Making zucchini bread is a great way to use up some of those monster squash you might have laying around.
Zucchini may be abundant in the summer, but what about all winter? How do I get my zucchini bread fix in December? You freeze it of course!
Trim the ends and seed large zucchini, then grate them up using a handheld box type grater or a food processor with a grating disc. Now for the fun part, pack the shredded zucchini into a 1 cup, measuring cup, and flip over onto a sheet pan sand castle style. Place the sheet pan in the freezer till they are frozen, then store in a heavy freezer bag.
To use the frozen zucchini you can either let it thaw overnight or use a microwave to speed it along. You will need to drain off the extra liquid that will be present, and you can even squeeze a little extra water out of the zucchini.
Not being one to leave well enough alone I have included a few options for chocolate, blueberry and even an apple bread. We like chocolate chips in our bread and the mini chips work out the best but use what you like.
My Favorite Zucchini Bread Recipe *with options*
- 1 C. Sugar
- 1 C. Zucchini shredded
- ¼ C. melted unsalted butter
- 1 tsp salt
- 1 Egg
- 1 ½ C. Flour
- ½ tsp. Baking Soda
- ¼ tsp. Baking Powder
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- ½ tsp Clove
- ½ C. Nuts * optional
- ⅓ C. Chocolate Chips * optional
Preheat Oven to 350F
In large mixing bowl combine; sugar, zucchini, butter, salt and egg mix well. On top of wet ingredients add flour, spices, baking soda and baking powder. Mix just the top to disperse the baking soda and baking powder. Add nuts and chocolate chips, mix till it is just combined. Pour batter in a greased 8X4X2 or 9X5X3 pan, bake for 45 -60 minutes. Let it cool for a few minutes then turn out on to wire wrack.
Would you would like to change it up a bit?
Apple Bread: try replacing the zucchini with tart apples, like a Granny Smith. Bake as directed.
Blueberry Zucchini Bread: To the above recipe, omit the spiced and 1 tsp vanilla add ½ C. fresh, or frozen berries that have been thawed, with the nuts and chocolate chips. Bake as directed.
Chocolate Zucchini Bread: To the above recipe, omit the spices and add ⅓ C. of coco powder with the flour and 1 tsp almond extract. Bake as directed.
